Prep time: 10 minutes, 4 servings

1 1/2 Cups Sunpix hearts of palm, drain/rinse with cold water, cut into 1/4-inch pieces
1 Loaf of French bread, sliced thin
1 Medium onion, finely chopped
1 1/2 Cup shredded Mozzarella cheese
Grated Parmesan cheese to taste
2 Tbs. mayonnaise
1 Medium red bell pepper chopped

Spread mayonnaise on top of bread, then a layer of SunPix hearts of palm, a thin layer of onions and bell pepper. Sprinkle with oregano. Top with Mozzarella & sprinkle with Parmesan. Preheat oven to 400, bake 5 minutes.
