Hearts of Palm with Crabmeat Salad and Avocado Vinaigrette

Prep time: 10 minutes, 6 servings

1/4 Cup rice wine vinegar
1/4 Cup chopped cilantro
2 Tbs. soy sauce
1 t. sesame oil
1 Ripe avocado, seed and cut 1/2-inch pieces
1/2 lb Jumbo lump crabmeat
1/2 Jar (8oz) Sunpix hearts of palm, drain/rinse with cold water, cut into 1/2-inch pieces
3 Tbs vegetable oil
Salt and pepper to taste

In a small bowl whisk together the rice wine vinegar, cilantro, soy sauce, sesame oil, vegetable oil, salt and pepper. Add the avocados, crabmeat, and hearts of palm, stir gently to combine. Garnish with lemon wedges, and cilantro, serve immediately.
